Hi Champagne is a sparkling, mostly white wine that are made from three different grapes - Pinot Noir, Pinot Meunier and/or Chardonnay. The first sparkling wines in France were made in south of France and is still made in the same way today in Limoux. What they did was to bottle the wine before it was totally ready so they locked in some of the carbon oxide in the bottle and got a sparkling wine. It is called Metode traditionelle. In champagne they invented a more efficient method. They added some sugar to the white wine and corked it so they got a second production of carbon oxide in the bottle. There is also a fake method used in some cheap sparklings, where they simply put some carbon oxide into the wine like in a soda.
